Smothered Pork Cube Steaks

I'm back!  I know it's been a long time since I posted anything new but I needed a break.  Plus I've been deciding what kind of food I wanted to cook going forward.  We have been on so many different kinds of diets to see what might be right for us.  Still undecided on what that is, I am trying to cook and eat a much healthier!  

Today I am posting a Paleo friendly recipe.  This is easy and a very fast dinner for you to cook for you and your family.  It is a tenderized pork steak smothered in sauteed onions, peppers and Rotel tomatoes cooked low and slow along with sides of garlic cauliflower smash and steamed asparagus.  It can be made in a Crock pot or on low heat in your oven.  It is very delicious and something you will want to add to your favorite recipes.







The Ingredients!


This is what the peppers and onions should look like when they are ready to poured over the pork!


Season pork steaks with salt, pepper and cumin and place in a foil lined 9x13 baking dish, overlap if necessary.



Place sauteed onions and peppers over pork then pour the 
Rotel tomatoes over the top of the top evenly. 
Seal with foil and bake in a pre-heated oven at 275 degrees for 3-4 hours. 


Paleo friendly peeps, no carbs, healthy, flavorful and easy to cook!  Smothered Pork Cube Steaks with peppers, onions and Rotel tomatoes.  The side here are garlic cauliflower smash and steamed asparagus.  




The Recipe:


Smothered Pork Cube Steaks

4-6 pork cube steaks (tenderized)
1 tablespoon of olive oil
1 large onion sliced
2 red (or multi-colored) bell peppers, cubed
1 can of Rotel tomatoes (original)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 teaspoon ground cumin

Heat olive oil in large skillet over medium high heat.  Saute onions and peppers until soft and lightly browned, set aside.

Season pork steaks with salt, pepper and cumin and place in a foil lined 9x13 baking dish, overlap if necessary.

Place sauteed onions and peppers over pork then pour the Rotel tomatoes over the top of the top evenly.  Seal with foil and bake in a pre-heated oven at 275 degrees for 3-4 hours. 

Serve with cauliflower mashed potatoes and any green side for a delicious Paleo friendly meal!

*This can also be made in a Crock Pot!  Cooking 4-6 hours on low.
