Crispy Oven Fried Pickles

Do you like fried pickles?  These oven fried pickles are fantastic!  Less fat, more flavor and super crunchy! I like dipping mine in my homemade low fat buttermilk ranch dressing.  Next time your having a craving for fried pickles, whip up a batch of these babies.  You wont be sorry!

Oven Fried Pickles

48 sliced dill hamburger pickles, I used ovals!
1/2 cup of Panko crumbs
1/4 cup of cornmeal
1/4 cup of flour
1/4 teaspoon of smoked paprika
1/4 teaspoon chipotle powder
1/4 cup fresh parsley, finely chopped
1 cup of low fat buttermilk
Olive oil spray

Make ranch dressing first and put into refrigerator until pickles are done.

Low Fat Buttermilk Ranch dressing:

1 cup olive oil mayonnaise
1/2 cup low fat sour cream
1 tablespoon fresh lemon juice
¾ cup low fat buttermilk
½ teaspoon kosher salt
1 teaspoon of dried chives, rehydrate with hot water(or 2 teaspoons fresh chives)
¼ teaspoon garlic powder
1/8 teaspoon dried thyme
1 tablespoon fresh parsley, chopped
2 teaspoon fresh dill, minced

In a medium bowl, mix together the mayonnaise, sour cream and lemon juice.  Thin the dressing out with the buttermilk to make the consistency you desire.  Blend in the salt, pepper, rehydrated chives (not the water, just the chives), garlic, thyme, parsley and dill.  Cover and refrigerate at least one hour or until your ready to use.  Can be kept in the refrigerator in an air-tight container up to one week.

To prepare pickles:
  1. Place pickles to drain on paper towels.
  2. Mix crumbs together along with 1/4 teaspoon smoked paprika and 1/4 cup of fresh parsley, finely chopped.
  3. Pour buttermilk in a flat bowl and season with chipotle powder.
  4. Dip pickles in buttermilk mixture and then into the crumb mix, pressing down on the crumbs.  
  5. Heat a baking sheet in a 425 degree oven for 3-5 minutes so that it gets really hot.
  6. Spray the baking sheet with olive oil spray and place pickles on the sheet.  Spray the tops of the pickles with the spray and return to oven for 5 minutes.  Remove and turn pickles over and cook for additional five minutes.
  7. Remove pickles from cooking sheet and place on a rake to cool.  
Dip in Low Fat Buttermilk Ranch dressing!  For added spiciness, add chipotle powder to your dressing!
