Zucchini Fritters

Zucchini fritters are a great side dish for any spicy meat main course you might be preparing for dinner.  It's a good way to get your veggies and they taste delicious!





Grate zucchini on a box grater or in your food processor.  Place shredded zucchini into a tea towel or cheesecloth and wring out the water from the zucchini.  You will not believe how much water is in that veggie! 


Place zucchini in a bowl and add egg white, breadcrumbs, onion, garlic powder, salt and pepper, mix until thoroughly combined.   


Make these right before you main dish is ready.  Do not let this sit or it will become watery.


Heat up the oil in a large heavy bottom skillet.  

Scoop about 1/4 cup of zucchini mixture into your hand and flatten to make a patty and transfer to the hot skillet.  Cook over medium-high heat for about 4 minutes or until brown and crispy.  Flip and cook on the other side until brown.

The Recipe:
Zucchini Fritters

2 medium zucchini, grated
1 cup Parmesan cheese, finely grated
1 large egg white, whisked
2/3 cup of panko bread crumbs
1/3 cup of chopped sweet onion
1/4 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 tablespoon canola oil
