Easy Chicken, Green Beans and Potato Bake

I found this recipe on my pinterest page the other day and I thought it looked simple.  I changed it up a bit to suit my taste by adding peppers and carrots to the mix and lowering the amount of butter and adding olive oil instead. The original recipe used 1/2 cup of butter and a package of Italian dressing mix.  I do not like to use package mixes as we don't really know what they are putting in those things so I made my own mix.  It turned out great and we were so hungry that I forgot to take a photo of the final product.  I promise when I make this next time I will take that photo and put it on this post!  Easy for you soccer moms, it can even be made in the crockpot.  Cook on high for 4 hours or on low for 6 hours.  It might not have the cool presentation but will taste the same. Go for it, make it soon, sure is a time saver!







The Recipe:



Chicken, Green Bean and Potato Bake

1-2 lbs chicken breast, boneless and skinless ( I used 3 chicken breasts)
12 oz package of frozen cut green beans
2 medium red potatoes, cut into 2”x2” chunks
2 carrots, peeled and 2” chunks
½ cup red peppers or multi-colored, 2” chunks
2 tablespoons butter
2 tablespoons olive oil
2 tablespoons of Italian dressing mix (recipe below)


Spray a 13”x9” baking dish.  Pre-heat oven at 350 degrees.
Line the green beans length wise down the dish, place chicken down the middle and lastly, line up the potatoes, peppers, and carrots.
Sprinkle everything with two tablespoons of Italian dressing mix.  Dot the butter over everything and then drizzle the two tablespoons of olive oil.  Cover with foil and bake for one hour.  Remove foil and serve. 



Italian Dressing Mix:
1 ½ teaspoon garlic powder
1 tablespoon onion powder
2 tablespoon oregano
1 tablespoon parsley (dried)
1 tablespoon sugar
1 ½ tablespoon salt
1 teaspoon black pepper
1 teaspoon basil
1/4 teaspoon thyme

Mix all ingredients together and store in air-tight container.

For Italian Salad Dressing:  Mix 2 tablespoons of this mix with 1/4 cup vinegar, 2 tablespoons of water and 1/2 cup of olive oil.  Whisk to blend.
