The Recipe:
Chicken, Green Bean and Potato Bake
1-2 lbs chicken breast,
boneless and skinless ( I used 3 chicken breasts)
12 oz package of frozen cut green
beans
2 medium red potatoes, cut
into 2”x2” chunks
2 carrots, peeled and 2”
chunks
½ cup red peppers or
multi-colored, 2” chunks
2 tablespoons butter
2 tablespoons olive oil
2 tablespoons of Italian
dressing mix (recipe below)
Spray a 13”x9” baking
dish. Pre-heat oven at 350
degrees.
Line the green beans
length wise down the dish, place chicken down the middle and lastly, line up the
potatoes, peppers, and carrots.
Sprinkle everything with
two tablespoons of Italian dressing mix.
Dot the butter over everything and then drizzle the two tablespoons of
olive oil. Cover with foil and
bake for one hour. Remove foil and
serve.
Italian Dressing Mix:
1 ½ teaspoon garlic powder
1 tablespoon onion powder
2 tablespoon oregano
1 tablespoon parsley
(dried)
1 tablespoon sugar
1 ½ tablespoon salt
1 teaspoon black pepper
1 teaspoon basil
1/4 teaspoon thyme
Mix all ingredients
together and store in air-tight container.
For Italian Salad
Dressing: Mix 2 tablespoons of
this mix with 1/4 cup vinegar, 2 tablespoons of water and 1/2 cup of olive
oil. Whisk to blend.
