Basil Almond Pesto

Have you seen the price of Pine Nuts?  They are like $17.00 a pound!  I made this pesto with sliced almonds and it turned out fabulous!  I love fresh pesto!

Wash and spin your basil! 

Dump all the ingredients into a food processor and puree. The lemon juice gives it an added zing and freshness.

This is the texture you want!  Liquid green gold!  I love Pesto!

The Recipe:

Basil Almond Pesto

1 ½ cups of basil leaves fairly packed
½ cups almonds, sliced or rough chopped
1 clove of garlic, rough chopped
1 cup of Parmesan cheese, freshly grated
½ cup olive oil, good quality
1 tablespoon of lemon juice, fresh not bottled
½ teaspoon of salt
¼ teaspoon black pepper

Toss everything into the food processor or blender and puree until thoroughly blended together.  Store in a air tight container in the refrigerator for up to a week.
