Mexican Cube Steak

After a long month of "cookers block", you know, "writers block" but for people who cook, I finally am posting a new recipe.  Sorry it took so long!  This is a really a spicy delicious and zingy recipe.  The steak is so tender you can cut it with a fork!  It will satisfy your craving for Mexican food without a lot of calories.  I served mine over brown rice!  This is quite spicy and if you dont like hot spicy things you might want to use a mild picante sauce instead of the medium and nix the chipotle powder.







Sauté sliced onion in 1/2 tablespoon olive oil until limp, about 5 minutes.  Season steak with ¾ teaspoon of ground cumin, ½ teaspoon of garlic powder, 1/14 teaspoon of Chipotle powder, ½ teaspoon of kosher salt and ¼ teaspoon of freshly ground pepper.  Place steaks in a 9”x13” baking dish sprayed with cooking spray.  Cover steaks with red peppers and onions. 



Pour the jar of picante sauce over the steak, peppers and onion. 




Cover with foil and bake in a pre-heated oven @ 350 degrees for 1 and ½ hours.  Remove foil and add 1 cup of low fat Mexican mix cheese, return to over for 10 minutes or until cheese melts.

I served mine over brown rice!

The Recipe:



Spanish Cube Steak

4 cube steaks (about 1 lb)
1 medium onion sliced
1 red bell pepper, diced
¾ teaspoon cumin
½ teaspoon garlic powder
¼ teaspoon chipotle powder (optional)
½ tablespoon olive oil
½ teaspoon kosher salt
¼ teaspoon freshly ground pepper
1 jar (16 oz.) of Pace Picante sauce (medium or mild)
1 cup of Mexican blend grated cheese (low fat)

This would also be good cooked in a crock-pot.  Just add all the ingredients to the crock pot, and then cook for on low for 6 hours.
