Sauté sliced onion in 1/2 tablespoon olive oil until limp, about 5 minutes. Season steak with ¾ teaspoon of ground cumin, ½ teaspoon of garlic powder, 1/14 teaspoon of Chipotle powder, ½ teaspoon of kosher salt and ¼ teaspoon of freshly ground pepper. Place steaks in a 9”x13” baking dish sprayed with cooking spray. Cover steaks with red peppers and onions.
Pour the jar of picante sauce over the steak, peppers and onion.
Cover with foil and bake in a pre-heated oven @ 350 degrees for 1 and ½ hours. Remove foil and add 1 cup of low fat Mexican mix cheese, return to over for 10 minutes or until cheese melts.
I served mine over brown rice!

4 cube steaks (about 1 lb)
1 medium onion sliced
1 red bell pepper, diced

1 jar (16 oz.) of Pace Picante sauce (medium or mild)
1 cup of Mexican blend grated cheese (low fat)

This would also be good cooked in a crock-pot. Just add all the ingredients to the crock
pot, and then cook for on low for 6 hours.
