Cheesy Summer Squash Bake
2 medium yellow squash, sliced in half moons
2 medium zucchini, sliced in half moons
2 tablespoons chopped sweet onion
2 tablespoons chopped fresh basil
1 teaspoon fresh thyme
1/2 teaspoon garlic powder
1/2 cup grated Italian blend cheese (Mozzarella, Provolone, Romano
3/4 cup of grated Parmesan cheese, divided
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
Preheat oven to 350 degrees.
Slice squashes and chop the sweet onion. Place squash and onion in a medium sized bowl and combine with the basil, thyme, garlic powder, salt, pepper, 1/2 cup of Italian blend cheese and 1/4 cup of Parmesan cheese. Stir mixture together until everything is well combined.
Spray a baking dish with cooking spray and bake for 30 minutes. Remove from oven and sprinkle with remaining 1/2 cup of Parmesan cheese, return to oven and bake for 15 minutes longer or until lightly golden on top.
