Caprese Chicken

It may not be pretty but I'm tell ya that this is delicious!
It's fast and easy.  Done is 30 minutes or less. I was reading one of my favorite blogs and saw a recipe she had done and she inspired me to make a few changes and this is what happened!  http://www.kalynskitchen.com/2010/09/easy-recipe-for-baked-pesto-chicken.html






Slice chicken in long strips about 1” wide.   Spray a baking dish with cooking spray.  Pour ½ cup of pesto in the bottom of baking dish.  Place chicken strips on top of pesto.  Top the chicken with the other ½ cup of pesto and then the tomatoes.  Cover with foil and place in a pre-heated 350 degree oven for twenty minutes. 





Remove foil and lay the cheese over the top of the pesto tomato chicken.  Return to oven for five minutes or until cheese is slightly browned.




Simply Delicious!



The Recipe:

Caprese Chicken

2 chicken breasts, boneless and skinless,
1 cup of basil pesto
2 tomatoes, chopped
1 ball of mozzarella cheese, sliced

Slice chicken in long strips about 1” wide
