Crock Pot Spanish Chicken

I love olives, do you?  This is such a fast easy way to make dinner.  The crock pot is our special friend.  It has dinner waiting for you when you get home in the evening.  Here's a great recipe just for you!





Place chicken in crock pot and sprinkle with paprika, garlic powder and black pepper.  Throw in the green onions and red pepper on top.  Dilute tomato paste with beer.  Toss in the drained green olives with tomato beer mixture and place on the lid.  Cook on high for 4 hours or low for 6. 





The Recipe:
Crock Pot Spanish Chicken



Serves 2


2 boneless, skinless chicken breasts
3 green onions, chopped 
6 tablespoons of tomato paste
5 ounce jar of green olive stuffed with pimentos
1/2 cup red pepper chopper
6 ounces of beer, I used Shiner Bock
2 teaspoons of smoked paprika
1/2 teaspoon of garlic powder
1/4 teaspoon freshly ground pepper


Place chicken in crock pot and sprinkle with paprika, garlic powder and black pepper.  Throw in the green onions and red pepper on top.  Dilute tomato paste with beer.  Toss in the drained green olives with tomato beer mixture and place on the lid.  Cook on high for 4 hours or low for 6.  (If you double the chicken to four, use liquid from olives and the same ingredients.  It will taste the same and serve four).  


Serve over rice or noodles.
