Is it still cold in your neck of the woods? Here is another soup recipe to warm your soul. I've been on a soup-cooking roll lately. I've grown tired of the usual sandwich or salad for lunch so I wanted something healthy, low calorie, warm and inviting to eat. So here it the latest recipe.

This is a hearty soup. The flavor is unbelievable, all the spices in the chicken sausage, a little smoky heat from the chipotle, sweet tomato and the liminess from the cilantro. OMG, you have to make this today. It is so good!
Chicken Sausage Soup
5 chicken sausages, casings removed and crumbled
2 tablespoon olive oil, divided
½ cup celery, chopped
½ cup sweet onion, chopped
½ cup carrot, chopped
2 cloves garlic, minced
¼ teaspoon chipotle powder
¼ teaspoon kosher salt
¼ teaspoon black pepper
6 cups of chicken broth, low sodium
1 can (4 ounce) chopped green chilies
1 can Rotel tomatoes, original
1 can cannellini beans, drained and rinsed until foaming stops
¼ cup cilantro
Heat 1 tablespoon of olive oil in a stockpot until hot and then add in the chicken sausage. Brown sausage and crumble as you brown the meat. When browned, remove from pot and drain off excess fat. Over medium heat add the last tablespoon of olive oil to the pot and sauté the onion, celery and carrots until tender, about 7 minutes. Throw the garlic in the pot until fragrant 1-2 minutes (do not brown garlic). Pour the chicken stock in to the pot and deglaze the bottom of the pan. Add the remain ingredients – green chilies, Rotel tomatoes and cannellini beans to the soup. Cook of medium heat for 30 minutes. Add in chopped cilantro and cook for addition 10 minutes. Serve with your favorite bread.
