Arugula Salad with Lemon Parmesan Dressing

I am really into making cool things to eat since it is so darn hot outside.  If I cannot be in the pool while BBQing, then your getting a cool meal at my house.  I thought I would share one of my favorite salads with ya'll.  I was first introduced to arugula while living in Amsterdam.  They used this in salad all the time.  I thought you might like to have a little background on it so according to Wikepedia, arugula is rich in vitamin C and potassium.  It has been grown in the Medditerranean since Roman times, and is considered an aphrodisiac!  It has a rich peppery taste and has a strong flavor for a leafy green.  The lemon and Parmesan dressing seems to marry well to the flavor of the greens.  
If you haven't ever tried arugula as your salad green, you should give it a try, besides, it's fresh and healthy.  Since I found this several years ago and I have been adapting this ever since.  I change it up everytime depending on what I have on hand.  This is the basic one today but add anything you like.
