Vegetable Lasagna

I am trying to find new ways to cook Italian food without all the fat and carbs.  Everyone need to eat lighter and healthier these days.  This vegetable lasagna is absolutely delicious!  I didn't even miss the noodles.  My zucchini stayed a little crunchy which I liked a lot.  Look  how yummy this looks.  I used my favorite Guinea pigs again and got all thumbs up.  So now it's your turn to try it!

The Recipe:

Vegetable Lasagna

1 large zucchini, sliced very thin (used for lasagna noodles)
3 Italian sweet turkey sausage, casing removed and crumbled
½ cup sweet onion, chopped
¼ cup red pepper, chopped
½ cup baby Bella mushroom, chopped
1 tablespoons olive oil
15 oz low fat ricotta cheese
1/4 cup grated Parmesan cheese
1/2 cup mozzarella cheese, grated and divided
1 package of frozen spinach, thawed and water squeezed out
1 large egg white
2 tablespoons fresh basil, finely chopped
1 tablespoon fresh oregano, chopped
1 6 oz tomato paste
1 8 oz tomato sauce
1-cup water
¼ cup red wine* optional

 S  1. Slice the zucchini ¼ inch thick lengthwise.  I used my mandolin.  Set aside the zucchini strips.

2.   Take sausage out of casing, in a large skillet crumble sausage and brown over medium heat until cooked thoroughly.

3.   To make the sauce:  heat olive oil in a medium sauce pan along with the onion, red pepper, mushroom until vegetables begin to be tender.  Add in the tomato paste, tomato sauce, and water and red wine.  Simmer over medium low heat for 15 minutes.  Add in the fresh basil and oregano and continue to cook another 10 minutes.

4.   In a large bowl whisk 1 large egg white, mix together with the ricotta cheese, Parmesan cheese, ¼ cup of mozzarella cheese.

5.   Squeeze out the thawed spinach until most of the water is gone.

6.   To build the lasagna:  In an 8x8 pan, spray with cooking spray to prevent sticking.  Add a little sauce to the bottom of the pan. Place zucchini strips across the bottom of the pan. Next add the ricotta cheese mixture. On top of the cheese mixture add half of the browned turkey sausage.  Over the top of the sausage, spread out half of the spinach.  Add a little sauce and make second and final layer the same way and top with remaining sauce and mozzarella cheese.  Bake in a pre-heated 400 degree oven for 30 minutes or until top is golden brown.
