I am trying to find new ways to cook Italian food without all the fat and carbs. Everyone need to eat lighter and healthier these days. This vegetable lasagna is absolutely delicious! I didn't even miss the noodles. My zucchini stayed a little crunchy which I liked a lot. Look how yummy this looks. I used my favorite Guinea pigs again and got all thumbs up. So now it's your turn to try it!

Cinderella Pumpkin Soup
Fall is here and so are the pumpkins. As I was sitting on a plane looking through the October issue of Bon Appétit I saw this recipe for pumpkin soup. They cooked the soup inside of the cleaned out pumpkin. I thought how cool does that sound? So I had to give it a try and it was such fun to serve to my family and friends. Really made a fun presentation.

Canning Dill Pickles With Aunt Carol’s Brine
Carol from Montgomery, AL kindly offered her brine (pickling solution)
to can our pickles.
What is better than eating dill pickles? Eating your own dill pickles! And they are so easy to make. And just so you know, once we completed our canning, we had to wait three weeks to taste before we posted this recipe (just to make sure they tasted as good as they looked).
Not to brag or anything, but our five related-but-unbiased taste testers gave us big "thumbs up." So here is the rest of the story...
