Mary's Potato Salad

What are you making this weekend to go with your college football games?  Maybe a little BBQ?  This is a perfect side to any BBQ you will make, 
Mary's Southern Potato Salad.  It is simply delicious!




The starting lineup! Potatoes and Eggs!
Peel and chop potatoes in a 2 inch cube as they will cook faster, put in large saucepan and cover with water.  Wash eggs and place in the center of the potatoes and make sure the water covers them.  Boil potatoes and egg for about 20 minutes.  Remove eggs and set aside to cool.

Chop the pickles and olives.


Drain water from potatoes and place in large bowl.  Add mayonnaise and mustard, stir and mash with your wooden spoon.  You will want to leave a lumpy consistency to the potatoes.  



Now throw in the dill pickles, sweet pickles and olives.  Peel and chop eggs.  Throw those in the potato salad too!  Mix everything together and taste!  Add your salt and pepper and adjust per your taste.  Cover with plastic wrap and refrigerate until ready to serve.  Can be made a day ahead if needed.


This is so good but only if like mustard!


Just one bite will not do!

The Recipe:


Mary’s Southern Potato Salad

2 lbs russet potatoes
2 eggs, hard boiled
1 cup mayonnaise
1/3 cup yellow mustard
1 cup dill pickles, chopped
3/4 cup sweet pickles, chopped
3/4 cup Spanish green olives with pimentos, chopped
1 teaspoon kosher salt
¼ teaspoon black pepper
