Pimento Cheese

Pimento cheese is true southern comfort food.  Basic ingredients of sharp cheddar cheese, mayonnaise and pimentos.  This is so good on Ritz crackers, sandwiches and even better on celery.  In Atlanta I see this is on most menus.  At one restaurant, Local Three, it is one of their favorite appetizers ordered by their customers.  I never knew it was so popular!

The Players!

Grate your cheese, dump all ingredients in a large bowl and mix until combine.

On a Ritz!

Or on a grilled cheese sammie!

The Recipe:

Pimento Cheese

8 ounces of sharp cheddar cheese, grated
4 ounce jar of pimentos, chopped
1/3 cup of mayonnaise

Place grated cheddar in a large bowl, add pimentos and mayonnaise, mix well until thoroughly combine.  Refrigerate for at least 2 hours before eating.  It’s really good on a Ritz cracker.  Or make a grilled pimento cheese sandwich.

I recently visited Atlanta and was fortunate enough to eat at the Highland Tap Steak Cellar. We had their hamburger topped with bacon & pimento cheese and it was FANTASTIC!!!
