Watermelon, Tomato, Gorgonzola Arugula Salad with Balsamic Vinaigrette

Last week, I came across a post from a fellow food blogger I met at a conference back in May, for a beautiful watermelon salad.  Her name is Gina at and she writes all about weight watchers friendly recipes.  This salad particularly caught my eye, it looked so refreshing that I had to share it with you. (http://www/  It inspired my very own version, using seedless watermelon, heirloom tomatoes, and gorgonzola sprinkled over a bed of arugula.  Topped with a simple balsamic vinaigrette.  Thanks to Gina for her perfect summer salad!

 P.S.  Check out the olive oil.  My youngest adopted an Olive Tree from Italy as my big Christmas gift last year and I finally received 4 cans of olive oil produced by my tree!  I can't wait to get the rest from the harvest this fall.  It is so fruity and full of flavor, truly the best olive oil I have ever had...

And the important part, the BITE! 
What can I say, a picture is worth a thousand words.

The Recipe:

Watermelon, Tomato, Gorgonzola Arugula Salad
With Balsamic Vinaigrette

1 ½ cups seedless watermelon, chilled and cubed
1 large heirloom tomato, cubed (or beefsteak)
½ cup of Gorgonzola blue cheese
8 oz baby arugula, washed well
2 tablespoons balsamic vinegar
1/3 cup extra virgin olive oil
¼ teaspoon freshly ground pepper

Divide arugula between four plates.  Top with watermelon, tomatoes and Gorgonzola.  In small bowl add balsamic vinegar and ¼ teaspoon freshly ground pepper, slowly add olive oil, stirring until liquid emulsifies into a vinaigrette.  Drizzle vinaigrette over each serving of salad.

Serves 4
