Oven Fried Green Tomato Sliders

This is true southern comfort!  Oven fried green tomato sliders with goat cheese, bacon, roasted red pepper aioli and spinach!  This is a little europeanfied for some folks, with the goat cheese and the red pepper aioli added in, but it is fan dang tastic!  Easy to make and should be made at your house immediately!






Tomato Players!




Slice tomato into ¼ to ½ inch slices. (get four slices per tomato).  Mix cornmeal, flour, garlic powder, Lawry’s season salt, chipotle powder and black pepper in a flat dish.  Pour buttermilk in another plate.  Slice goat cheese into four equal parts and place on top of each tomato slice.  (smash goat cheese to where it covers most of the tomato slice). 






Now dip each tomato slice into buttermilk first then into cornmeal mixture.  Be sure to coat both side.  
Pre-heat oven to 400 degrees.  Place baking sheet in oven to pre-heat for 5 minutes.  Spray baking sheet liberally with cooking spray  and place tomatoes on the sheet, not touching each other.  Spray tops of tomatoes with cooking spray and place in the oven for 10 minutes or until browned and then turn over for another 10 minutes.





Remove from oven.  Toast your slider buns.  Dress the buns with the roasted red pepper aioli to each side and place 1 tomato slice, bacon, spinach and top, continue until all four are put together.   Serve 2 sliders per person.

4 pieces of apple wood smoked bacon
4 slider buns

Roasted Red Pepper Aioli Players!



Roasted Red Pepper Aioli

1/3 cup low fat mayonnaise or fat free greek yogurt
¼ cup roasted red peppers
1 tablespoon sweet onion, finely minced
2 teaspoons lemon juice
1 clove of garlic

Rough chop peppers, onion and garlic.  Add all ingredients into a small food processor and pulse until smooth.  Store in refrigerator for about an hours so that all ingredients marry together.
