Green Chile Cheese Casserole

Have you tried Quinoa pasta?  This was my first experience with it and I must say it has a nutty flavor and was very similar to wheat pasta.  This pasta is low in sodium, cholesterol free and gluten free.   I adapted the recipe from the back of the box and added some of my own ideas.  
It came out very rich, creamy, nutty and full of flavor.

Oven Fried Green Tomato Sliders

This is true southern comfort!  Oven fried green tomato sliders with goat cheese, bacon, roasted red pepper aioli and spinach!  This is a little europeanfied for some folks, with the goat cheese and the red pepper aioli added in, but it is fan dang tastic!  Easy to make and should be made at your house immediately!

Zucchini Ribbon Salad with Lemon Parmesan Dressing

For the hot summer nights this salad is truly amazing.  The zucchini is so light and crunchy, the smoky pine nuts and that tangy lemon dressing with the small torn pieces of basil, this is pure heaven!

Proscuitto Appetizers

You know that I love Italian cuisine but since I am here in Atlanta this week I thought that I would look at adding a bit of Georgian flair to some of my favorite appetizers. Procuiutto seems to be the perfect link to combine the regions flavors/tastes.  Here are three ideas....

Pimento stuffed olives - Pimento cheese is a favorite of around here so I stuffed some green olives with the cheese and wrapped with prosciutto. Roast on the BBQ or in a skillet.

Roasted tomatoes - Wrap a cherry tomato with prosciutto.  Roast either on a BBQ or in a skillet.

Peach wrap - wrap a peeled peach slice with prosciutto.

Watermelon, Tomato, Gorgonzola Arugula Salad with Balsamic Vinaigrette

A big hey from Atlanta, where I'm currently cooking with my hubbie!

Last week, I came across a post from a fellow food blogger I met at a conference back in May, for a beautiful watermelon salad.  Her name is Gina at and she writes all about weight watchers friendly recipes.  This salad particularly caught my eye, it looked so refreshing that I had to share it with you. (http://www/  It inspired my very own version, using seedless watermelon, heirloom tomatoes, and gorgonzola sprinkled over a bed of arugula.  Topped with a simple balsamic vinaigrette.  Thanks to Gina for her perfect summer salad!
