Mini Peach Crumb Pies

I'm in Georgia, and what a better way to celebrate is to make something with Georgia Peaches.  The peach is Georgia's state symbol.  While out on a weekend excursion we stopped at a road side vendor and purchased Georgia peaches.  
So I had to make you something with my peaches. 

Just for you my dears, "Mini Georgia Peach Crumb Pies".  

Here is the first bite, just a temptin looksie for ya'll 
(that's southern talk for here it is, you guys!) 
and hopefully your mouth is watering and your wanting to


The Players!


Peel and chop peaches into a small bowl. 


 Add 1/8 cup sugar, 1/8 cup flour and ½ teaspoon cinnamon
 into the peaches and blend well, set aside.


Open dough, roll out on a floured suface.  Using a round cutter 2 inches larger than the custard cups that you are using.  I used 6” bowl to cut my circles for a 4" custard cup.  I cut the dough and placed dough into the custard cups and crimped the tops like a piecrust.  Do this for each crust.


Place ½ of the peaches into each piecrust.  

Make crumbs.  Cut the butter with a fork, into the 
flour, sugar and cinnamon mixture


until it forms small pea size crumbs.  


Place the crumbs over the top of the individual peach pies.  


Bake in a pre-heated 375 degree oven for 1 hour.

1 pkg Pillsbury pie dough (2 rolled in package)

Crumbs:
½ cub butter
½ cup flour
½ cup sugar
½ teaspoon cinnamon
 
Serves 2
