Fried Avocados with Lime Dipping Sauce

 Yes it's true.  Fried Avocado's!
I hardly ever fry anything but I just had to try these.  They are fantastic, fabulous and just down right awesome.







The Players!




In a medium bowl combine buttermilk, hot sauce and avocado slices.  


Soak for 30 minutes.



In a small bowl combine yogurt, lime juice, cilantro, onion, jalapeno and salt. Stir together and chill until ready to use.



In a large deep sauce pan fill oil to a depth almost 
halfway up the sides of the pan.  
Heat oil to 375 degrees over medium-high heat.

Combine Panko crumbs and chipotle powder is shallow dish.  



Dredge soaked avocado slices in the crumbs, shaking to remove excess.  


Place avocado slices in the hot oil and fry until golden, about 1 to 2 minutes.  Using slotted spoon, remove slices and drain on paper towel lines plate.  
Season with salt and grated Parmesan cheese.  
Serve immediately with lime dipping sauce.


Just look at that creamy avocado and that crunchy Panko crust!



It gets better with every bite!

Fried Avocado Slices with Lime Dipping Sauce

¾ cup low fat buttermilk
1 tablespoon Tabasco sauce
2 ripe avocados, peeled, pitted and sliced
¾ cup fat free Greek Yogurt
1/8 cup fresh lime juice
1/8 cup chopped cilantro leaves
1/8 cup diced sweet onion
1/8 cup jalapeno diced
1 teaspoon salt
1 cup Panko bread crumbs
¼ teaspoon chipotle powder
