Crock Pot Minestrone Soup

Want something easy for dinner? This is so easy to prepare you'll add this to your all time favorite crock pot meals.  Just throw it in the crock the night before and take it out in the morning, turn it on LOW for six to eight hours.  This is a very affordable, fast and delicious, healthy meal for you and your family.




The Players!


Chop all your veggies,


In a slow cooker, combine tomatoes, cannellini beans, carrots, green beans, celery, potatoes, onion, basil, thyme, sage, bay leaves, salt and pepper.  


Add beef broth


and vegetable broth.  Cover and cook on low for 6 to 8 hours.



Dice zucchini and set aside to add later with pasta.


One hour before soup is done cooking, add pasta and zucchini.  
Cover and cook for one more hour. 



The pasta adds thickness to the soup.  Use any small pasta you can find or break up some spaghetti instead,


Ladle soup into bowls and sprinkle with Parmesan cheese.



A warm and delicious meal for any cold winter's night.

The Recipe:

Minestrone Soup

4 cups low sodium beef stock
2 cups low sodium vegetable stock
1 quart of tomatoes, chopped (or a 28 ounce can)
1 (15 ounce) can cannellini beans, drained and rinsed
1 carrot, peeled and diced
1 cup fresh green beans, chopped
1 celery stock, chopped
1 medium red potato, diced
½ cup sweet onion, chopped
1 teaspoon fresh basil, chopped
1 teaspoon dried thyme
½ teaspoon dried sage
2 bay leaves
½ teaspoon salt
¼ teaspoon black pepper
1 medium zucchini, chopped
1 cup canestrini pasta or any small pasta
1 cup baby romaine or any greens
4 tablespoon Parmesan cheese, grated

Serves 8.

In a slow cooker, combine broth, tomatoes, cannellini beans, carrots, green beans, celery, potatoes, onion, basil, thyme, sage, bay leaves, salt and pepper.  Cover and cook on LOW for 6-8 hours.  One hour before soup is done cooking, add pasta, zucchini and greens.  Cover and cook for one more hour. 

Ladle soup into bowls and sprinkle with Parmesan cheese.
