Using a 3” round cookie cutter, cut out 16 circles from pie crusts.
Divide goat cheese among the circles.
Lightly dot edges of the dough with water, fold in half,
and press with a fork to seal.

Bake on a baking sheet @ 400 degrees for 12 minutes until lightly browned. Serve with salsa.

Goat Cheese Empanadas
1 package refrigerated rolled pie crusts
3 inch round cookie cutter
4 ounce package herbed goat cheese
1 store-bought jar of corn salsa
