I promised you I would do something with the leftover dressing from the Asian Spinach Salad with a Twist, right?
Here it is.....
Do you recognize the corn? Capt'n Z's Fried Corn and of course fresh steamed green beans. I was flying solo for dinner tonight! Do you cook for yourself? Sure it would have been easier to stop off at Mickey D's for a quick bite but this is so much healthier for me and you. It only took about thirty minutes to prepare. Now you ask, how was that chicken? It was fantastic. It had such a wonderful flavor, a little sweet and very juicy. So when you make the salad, save the leftover dressing and cook this chicken the next night,
you will not regret your decision!

Marinate chicken in 1/2 of leftover dressing. Reserve other half for basting.
Preheat and oil your grill at 400 degrees. Remove chicken from marinate and discard the marinate. Place chicken on the grill and baste with remainder of the dressing with every turn. Cook for 4 minutes, turn over, baste again, cook for another 4 minutes. Turn over again and continue basting and turning until chicken is done, approximately 16-20 minutes depending on the thickness of the chicken breast. (By turning so many time you get a nice glaze on the chicken)

Thanks MJ for sharing your recipe with us. Your salad was wonderful and having the leftover dressing was great used as a marinate. I will try this marinate on other meats as well, maybe pork tenderloin or pork chops.

Glazed Grilled Chicken Breast
4 boneless, skinless chicken breast
1 cup Crisco vegetable oil
¾ cup sugar
¼ cup vinegar
1/3 cup catsup
2 tablespoons Worcestershire sauce
1 medium onion, finely chopped
In a large bowl, whisk oil, sugar, vinegar, catsup, Worcestershire sauce until well combined and thick, then add onion and combine.
Pour 1/2 of the dressing into a bowl with the chicken breast, cover and marinate in the refrigerator for up to 2 hours.
Pre-heat and oil the grill to 400 degrees. Remove chicken from marinate and discard marinate. Place marinated chicken on the grill and bast with the remainder of the dressing with every turn. Cook for 4 minutes, turn over, bast again, cook for 4 minutes. Turn over again and continue basting and turning until chicken is done, approximately 16-20 minuted depending on the thickness of the breast.
Serve with your choice of sides.
