Pepper Halibut with Salsa Verde Cream
Cook chopped peppers in 1 tablespoon of olive oil until lightly brown, about 10 minutes. Keep Warm.
Lightly oil a baking sheet. Salt and pepper halibut and broil for 5-7 minutes until done, depends on thickness. We used the rack in the middle of the oven. In a small sauce pan mix sour cream and salsa together and heat throughly.
Plate with a mound of peppers first.
Place halibut on top of peppers.
Spoon salsa cream over the top and sprinkle with cilantro.

Pepper Halibut with Salsa Verde Cream
1 red pepper, diced small
1 yellow pepper, diced small
1 poblano pepper, diced small
1 tablespoon of olive oil
1 1/2 pounds Halibut
¾ cup sour cream
1/3 cup salsa verde (green salsa)
Salt and pepper to taste
Cilantro for garnish
Heat oil until hot but not smoking and add chopped peppers. Cook over medium low heat for 10 minutes or lightly brown. Keep warm.
Sprinkle salt and pepper over halibut. Place halibut on the middle shelf in the oven on broil. Broil 5 -7 minutes until done, depends on thickness.
While halibut is cooking, combine sour cream and salsa in a small sauce pan and simmer until heated through.
Plate it by putting some pepper mixture on the plate, then halibut on top and spoon some of the salsa cream over the top. Garnish with a little of cilantro.
